Pastry Care and Storage

Tunisian pastries are not fragile so much as particular. A few habits keep them at their best.

The short version

  • Keep them in the original box or an airtight container.
  • Cool, dry, out of direct sunlight and away from the stove.
  • Do not refrigerate.
  • Close the box between servings rather than leaving it open on the counter.

Why not the fridge

Refrigeration is the most common way a good box of pastries is ruined. Cold, humid air softens layered pastry, dulls the crispness of samsa and baklawa, and makes shortbread go heavy. Room temperature, sealed, is better in almost every case.

By type

  • Layered pastries (baklawa, samsa) — texture is the whole point. Keep them sealed and eat them while they still shatter.
  • Semolina pastries (makroudh) — sturdier and more forgiving. They dry out rather than go soft.
  • Almond pastries (kaak warka, mlabbes) — keep them away from anything strongly scented; almond and floral water pick up other smells easily.
  • Shortbread (ghraiba) — the most delicate to handle. Keep the box flat and do not stack anything on it.

Serving

Bring the box to the table rather than plating everything at once, and serve with mint tea, espresso or Arabic coffee. If a box has been sealed in a cool room, it needs nothing else before serving.
